Fun Fact 3: Of the 18,000+ growers in Champagne, only 4000+ own their vineyards 100% and make the wine, what we commonly call “Grower” Champagne, generally in VERY small quantities. And only 5% of these are even imported into this country! Of the 4000+ growers, only 28 (!) belong to the exclusive “Club Trésors de Champagne”, aka the Special Club. Salmon is one. But all that amazingness aside (you saw the price, right??) --- this cuvee is something that the family specializes in, and is somewhat rare in the region -- 100% Pinot Meunier. The wine is POPPIN’ with creamy richness, cheek-tingling freshness, bold hazelnut and toasted bread notes, gingerbread and sweet white raisins. Mouthfilling and pure as the driven snow, this is EXACTLY, expressly, faultlessly what you want to serve day and night during the next few months.

Of those, Champagne Salmon may be the only one who show such a strong bias toward using Pinot Meunier as their primary grape of choice. Most producers in the region favor Pinot Noir or Chardonnay. Champagne Salmon call themselves the "Meunier experts" and the grape accounts for 85% of their vineyard plantings. This is small production, family-owned bubbly at its best!

About The Producer
Unlike the big producers, who combine fruit from all over the place to create a uniform style, Special Club members must be designated RM (Recoltant Maker, or a grower-producer) and use only fruit from their estate vineyards to create the most epic vintage bottling possible. Members submit wine to two blind tasting panels, and if judged good enough, the wine goes into a uniquely shaped bottle. Three years later, they release it to the delight of hardcore bubbly lovers around the world.
In addition to making wine, Oliver and his son share a passion for piloting hot air balloons, something that’s expressed in the sculpture in front of the winery and on the logo of their Montgolfiere line of wines.
